As a mentor, you not only get to watch students conceptualize an entire development project in a day, but intervene at key moments with questions to help them strengthen their projects. While the students are doing the heavy lifting mentally, it blows the dust off your own brain when you try to grasp their projects quickly, link them to your knowledge of the local context or development best practices, and come up with questions for them.
